Freekeh is a traditional Middle Eastern grain made from roasted green wheat. It has a slightly smoky flavor and is ideal as a side dish, in soups, salads or with meat and vegetables. Especially popular in Syrian and Arabic cuisine.

Freekeh (roasted green wheat).

Preparation:

Check the grains and remove any impurities.
Soak the freekeh for 15 minutes in hot water and then rinse twice with cold water.
Sauté the freekeh for about 5 minutes in a little ghee or oil.
Add broth and cook for approximately 30 minutes over low heat until the water is absorbed.
Let it rest for a few minutes covered with a lid.
Serve with meat, chicken or vegetables.
