Hummus with tahini is a smooth chickpea spread that belongs among the best-known dishes of the Middle East. Find out what it is made from, how it differs from msabaha, and how a simple addition of tahini can improve the taste of ready-made canned hummus.

What is hummus with tahini? Get to know the traditional chickpea spread

For many Czech customers, hummus is known mainly as a cold spread sold in small plastic containers. In the cuisines of the eastern Mediterranean and the Middle East, however, it has a much broader significance.

Traditional hummus with tahini, called hummus bi tahini in Arabic, is prepared from cooked chickpeas, tahini sesame paste, lemon juice, garlic, and salt. Depending on the recipe, cold water, ice, olive oil, or cumin may also be added.

The Arabic word hummus itself means chickpeas. A more precise name for the prepared dish is therefore “hummus with tahini,” meaning chickpeas with sesame paste.

The result is a smooth, creamy spread with the mild taste of chickpeas, a more pronounced sesame note, and the fresh acidity of lemon.

Why is hummus so important in the eastern Mediterranean?

In the Levant, hummus is not merely a dip served as an evening snack. It may be part of breakfast, lunch, dinner, or a larger table of appetizers known as mezze.

It is served in homes, restaurants, and specialized establishments focused almost exclusively on hummus and other chickpea dishes. In some cities, such establishments are family-run places passed down between generations and form a normal part of everyday social life.

Hummus is usually eaten with bread. The bread is used to scoop up the spread directly from the plate, so no spoon or cutlery is necessary.

A classic serving may be garnished with:

  • olive oil,

  • whole chickpeas,

  • parsley,

  • paprika,

  • sumac,

  • cumin,

  • pine nuts,

  • or meat or additional vegetables.

What is the history of hummus?

The exact place and date of origin of the modern form of hummus cannot be reliably determined. Chickpeas were cultivated in the Fertile Crescent as early as antiquity and were among the region’s staple crops for a long time.

One of the oldest known written references to a dish combining mashed chickpeas, tahini, and an acidic ingredient comes from the Syrian culinary tradition of the 13th century. Historical recipes, however, differed from modern hummus and may have contained vinegar, nuts, herbs, or other spices.

It is therefore more accurate to say that modern hummus developed gradually through the cuisines of the Levant and the wider Middle East, rather than attributing its invention to one specific person or modern-day country.

What is hummus made from?

The base of traditional hummus consists of several simple ingredients:

  • cooked chickpeas,

  • tahini,

  • lemon juice,

  • garlic,

  • salt,

  • water.

Tahini is what distinguishes traditional hummus from an ordinary chickpea spread. It gives it a sesame taste, a fuller character, and helps create its typical creamy texture.

Individual recipes and ready-made products may differ in the ratio of chickpeas to tahini, the amount of salt, acidity, and the use of additional ingredients. Two cans of hummus may therefore not taste the same, even though they have a similar name.

Hummus or msabaha? What is the difference between them?

Hummus and msabaha, also written as musabaha or masabacha, are related dishes made from chickpeas and tahini, but their texture is not the same.

Hummus with tahini

In classic hummus, the chickpeas are blended or mashed into a fine and, if possible, smooth spread.

Typical hummus is:

  • creamy,

  • uniform,

  • easy to spread,

  • usually served on a wide plate.

Msabaha

Msabaha contains whole or only lightly mashed warm chickpeas immersed in a thinner tahini sauce with lemon, garlic, and sometimes chili.

The name is associated with the idea of chickpeas “swimming” in the sauce. The dish can be described simply as a less blended or “deconstructed relative” of hummus. The names and exact preparation, however, vary between cities and families.

A Czech customer can therefore remember the difference simply:

Hummus is a smooth spread. Msabaha is a warmer and coarser dish with visible chickpeas.

What types of hummus can be purchased?

Ready-made canned hummus

This product is ready for immediate serving. It usually contains cooked chickpeas, tahini, water, salt, and an acidity regulator.

After opening, it is enough to transfer it to a bowl, mix it thoroughly, and adjust it to taste.

Its advantages include:

  • quick preparation,

  • a long shelf life when unopened,

  • easy storage,

  • the possibility of using only part of the package.

Instant hummus mix

Instant hummus is made from dried and ground chickpeas, tahini, and other ingredients. Before consumption, it must be mixed with water and possibly olive oil according to the manufacturer’s instructions.

For example, the Kasih instant mix offered on Sahha.cz contains ground dried chickpeas, tahini, salt, citric acid, and garlic powder. The manufacturer states that it is suitable for vegans.

Instant mix is practical for:

  • larger households,

  • celebrations,

  • catering,

  • restaurants,

  • preparing a larger quantity at once.

The ratio of water to mix stated on the specific package must always be followed. Too much water will create thin hummus, while too little may cause a dry or grainy consistency.

Homemade hummus

The homemade version makes it possible to adjust the amount of tahini, lemon, garlic, and salt according to personal taste.

It can be prepared from chickpeas cooked at home or from sterilized canned chickpeas. For a fine texture, the chickpeas must be very soft.

Ready-made canned hummus can be eaten immediately after opening. With many varieties, however, the consistency may be firmer after removal from the can and the sesame taste less pronounced than what we know from freshly prepared hummus in an Arabic restaurant.

Adding fresh tahini can make a major difference.

Recommended method for a standard can

 

  1. Transfer the canned hummus to a sufficiently large bowl.

  2. First mix the separate tahini very thoroughly, all the way to the bottom of its container.

  3. Add one tablespoon of tahini to approximately 400 to 430 grams of prepared hummus.

  4. Mix the hummus thoroughly and vigorously until the tahini is evenly distributed.

  5. Taste it and add another half tablespoon if necessary.

  6. If the hummus becomes too thick, add cold water or lemon juice one teaspoon at a time.

  7. Finally, you can drizzle the surface with olive oil.

For most standard cans, a suitable starting amount is therefore one to one and a half tablespoons of tahini. This is not a mandatory universal ratio. The amount depends on the package size, the original tahini content, and personal taste.

For a small 220-gram can, start with approximately one to two teaspoons.

Do not add tahini without first mixing the contents of its container. The oil is usually at the top, while the thick sesame portion may settle at the bottom.

Hummus adjusted in this way gains:

  • a more pronounced sesame taste,

  • a fuller character,

  • a smoother and fresher impression,

  • a consistency that can be further adjusted with water or lemon.

How should ready-made hummus be served correctly?

Hummus usually does not look its best directly in the can.

Transfer it to a shallow plate and use the back of a spoon to create a gentle hollow in the center. Then add a little olive oil.

  • parsley,

  • ground paprika,

  • sumac,

  • za’atar,

  • pine nuts,

  • pomegranate molasses,

  • sliced olives.

Use pomegranate molasses only by the drop, because it has a pronounced sweet-and-sour taste.

What can hummus be eaten with?

You do not need special Arabic bread to taste hummus.

Pita bread

Pita is the classic choice. Cut it into smaller pieces and scoop up the hummus directly with a piece of bread.

Czech bread

Hummus can be spread on wheat-rye, rye, or sourdough bread. It also tastes good on toast or toasted older bread that is still safe to eat.

Bread roll and bun

A sliced bread roll with hummus is a quick snack. Tomato, cucumber, olives, pickled vegetables, or cheese can be added.

Toast, baguette, and tortilla

In a sandwich or wrap, hummus can partially replace butter, mayonnaise, or another spread.

It combines well with:

  • grilled chicken,

  • falafel,

  • roasted vegetables,

  • cheese,

  • fresh vegetables.

Crackers and rice cakes

Hummus can be served as a dip with crackers, crispbread, or rice cakes.

For gluten-free serving, it is necessary to check not only the bread but also the label of the hummus itself. Some products or instant mixes may warn of possible traces of gluten.

Fresh vegetables

As a dip, it is suitable with:

  • carrots,

  • cucumber,

  • bell pepper,

  • celery stalks,

  • radishes.

How to choose high-quality ready-made hummus?

Check the proportion of chickpeas and tahini

A higher tahini content may mean a more pronounced sesame taste and a fuller consistency. However, there is no single ideal ratio for all customers.

Check the ingredients

The base is usually simple:

  • chickpeas,

  • tahini,

  • water,

  • salt,

  • an acidity regulator.

Other flavored varieties may contain garlic, spices, chili, herbs, or oil.

Compare the salt content

The salt content may vary between brands. Taste the hummus before adding more salt.

Choose a suitable size

A small can is suitable for one or two people or for a first tasting.

Tahini is made from sesame. Sesame is among the allergens that must be clearly identified under EU rules.

  • peanuts,

  • nuts,

Always check the current label of the specific product. The EU regulation on the provision of food information to consumers requires regulated allergens to be clearly identified.

Frequently asked questions about hummus

Is hummus the same as chickpeas?

No.

Chickpeas are a legume. Hummus is a prepared dish made from chickpeas, tahini, and other ingredients.

Does hummus always contain tahini?

Traditional hummus bi tahini does. Some modern chickpea spreads may be made without tahini, but their taste and consistency differ from classic hummus.

Does canned hummus need to be cooked?

No, if the package identifies it as a ready-made product intended for direct consumption.

The instant dry mix, however, must be prepared according to the instructions and is not intended to be consumed in its dry state.

Why add more tahini to canned hummus?

Additional tahini can enhance the sesame taste and bring the ready-made product closer to the character of freshly prepared hummus.
